New Forest Shortbread is created by Tracy Thew and her team at Burley Rails Cottage in the New Forest, Hampshire. Tracy has been baking shortbread for over 50 years, initially as gifts for friends and family, and later expanding into a thriving artisan business. Each batch is handmade in small quantities, ensuring a homemade, melt-in-the-mouth quality that has earned multiple awards, including Gold at the World Taste Awards, Great British Food Awards, and a Great Taste Awards
